Fideuà
Ingredients for 4 servings:
300g. Noodles nº2 with Squid ink
seafood “fumet”(soup)
1 onion
3 tomatoes
3 garlic cloves
3 almonds
3 hazelnuts
100 cc olive oil
200 g cuttlefish, cut in small rings
15 prawns (heads and tails separately)
Preparation:
A garlic clove is chopped. Fried softly with olive oil. When it is golden, noodles are added, fried during a few minutes and then removed.
The prawns’ heads are fried in 25cc. of olive oil and then removed. In the same olive oil a stir-fry is made with the onion and the tomatoes. After that, cuttlefish rings are added and cooked during 5 minutes.
After that, the noodles are put in a pan at strong fire, and when hot, seafood “fumet” (previously boiled) is added. Everything is stired while the following ingredients are added: prawn tails and the minced almonds, hazelnuts and garlic. Finally the saucepan is put in the oven at 200ºC during 4 minutes.
